Founded by François Abadie and Benos Bustamante, this culinary gem opened its doors on October 1, 2019, with a singular mission: to share the rich flavors, traditions, and warm hospitality of Oaxaca, Mexico with the local community. The restaurant specializes in meticulously prepared mole sauces that represent generations of culinary heritage, with roots tracing back to the ancient Zapotec and Mixtec civilizations. Each batch of mole is carefully crafted using traditional ingredients including chilies, cacao, herbs, and seeds blended with Spanish-introduced spices to create the complex, layered flavors that define authentic Oaxacan cuisine. The menu features an impressive array of dishes including chicken mole negro, molotes over zucchini mole, memelas, chile relleno mole amarillo, and octopus served over corn polenta with mole rojo. CONMOLE also offers thoughtfully curated vegetarian, vegan, and gluten-free options ensuring everyone can experience the depth of Oaxacan flavors.
